Cooking in your kitchen may be increasing your risk of lung cancer and other respiratory illnesses, even if you do not smoke. New research highlights how everyday cooking, especially with gas stoves and poor ventilation, releases harmful pollutants into indoor air. The World Health Organization warns that 2.1 billion people globally use cooking methods that could be putting their health at risk.[lung+1]
Hidden Dangers in Your Kitchen Air
Cooking generates various pollutants, regardless of the stove type. Gas stoves, used in about 38% of U.S. homes, release nitrogen dioxide (NO2), carbon monoxide (CO), and benzene. NO2 is a respiratory irritant linked to asthma development and chronic obstructive pulmonary disease. Benzene is a known human carcinogen, meaning it can cause cancer. Levels of NO2 in homes with gas stoves can be 50% to 400% higher than in homes with electric stoves, often exceeding outdoor air health standards. Some studies estimate that gas and propane stoves are responsible for approximately 200,000 current pediatric asthma cases in the United States.[cdphe+13]
Beyond gas stove emissions, the act of cooking itself produces fine particulate matter (PM2.5), which are tiny particles that can penetrate deep into the lungs. High-heat cooking methods like frying, broiling, or searing, particularly with oils, also release volatile organic compounds (VOCs), including formaldehyde and polycyclic aromatic hydrocarbons (PAHs). Formaldehyde is a dangerous carcinogen, and PAHs are identified as major carcinogenic factors, especially when cooking oil is heated to high temperatures. Carbon monoxide is a highly toxic, odorless, and colorless gas produced by incomplete combustion, and gas ovens are more likely to create it, especially older models.[lung+17]
Linking Cooking Fumes to Lung Cancer
Numerous studies have explored the connection between cooking fumes and lung cancer risk. A meta-analysis of 23 scientific studies indicated that exposure to cooking oil fumes significantly increases the risk of lung cancer in women, regardless of their smoking status. For cooking women, the risk of lung cancer from cooking oil fume exposure was nearly doubled, with an odds ratio of 1.98 for non-smoking populations and 2.00 for partly smoking populations.[ipb+2]
Poor kitchen ventilation plays a critical role in increasing this risk. A prospective cohort study of 71,320 never-smoking women in Shanghai, China, found that consistently poor kitchen ventilation was associated with a 49% increase in lung cancer risk. Women who lived in homes with poor ventilation during both childhood and adulthood faced a 69% elevated risk of lung cancer. Studies in Taiwan and Hong Kong also showed a significantly higher risk of lung cancer for women who cooked in kitchens without fume extractors. For example, one study found that not using an extractor led to an odds ratio of 5.4 for lung cancer when compared to hospital controls. She also explained that polycyclic aromatic hydrocarbon (PAH) compounds, formed when cooking oil is heated at high temperatures, are major carcinogenic factors. Long-term exposure to these fumes can gradually harm respiratory tract cells, potentially damaging cellular DNA and increasing the likelihood of genetic mutations that lead to lung cancer.[ipb+2]
Protecting Your Home's Air Quality
Experts recommend several steps to reduce indoor air pollution from cooking. Proper ventilation is paramount. Using a range hood that vents outdoors is the most effective method to remove pollutants. It should be turned on every time burners or the oven are in use and left on for 10-20 minutes after cooking finishes. Cooking on back burners, which are often better ventilated, can also help. If an outdoor-venting hood is not available, opening windows and using a wall or ceiling fan can improve airflow. Cooking methods also make a difference. Avoiding high-temperature cooking like deep-frying, charring, or burning meat can reduce the release of harmful compounds.
